Aged teas encompass Puer (from China's Yunnan province) or other tea (oolong or green) allowed to fully oxidize gradually over time, rather than immediately after picking, the method for producing black (red) teas. This process results in a robust tea with pronounced woody and earthy notes. Teas in this style also have the advantage of enduring for years, and historically were formed into bricks or cakes to facilitate transport over long distances. Consequently, the traditional style of tea in far-flung regions such as Tibet is prepared using an aged tea for its tea ingredient. Nowadays, aged teas can be found in loose leaf, brick, or cake form. Puer tea is popularly believed to aid in digestion and lower cholesterol. In China, it is traditionally considered a suitable beverage after a big meal.
Storage
If storing your puer tea for long periods, a breathable container (clay is ideal) is preferred. Oxygen is required for the aging process to continue. Aged oolongs should be stored like fresh tea, in a sealed bag or container.
